Ingredients
- 1/2 cup Ozganics Mango & Chilli Dressing
- 4 chicken breasts
- 2 cups cherry tomatoes, halved
- 1 large onion, sliced
- 1 head butter lettuce, torn into pieces
- Fresh dill, chopped
- 1 tbsp olive oil
- Salt and pepper to taste
- 1/4 cup Ozganics Balsamic Dressing
Method
1. Marinate the Chicken: Place the chicken breasts in a bowl and cover with Ozganics Mango & Chilli Salad Dressing. Marinate in the fridge for at least 30 minutes.
2. Roast the Tomatoes & Onions: Preheat the oven to 200°C (400°F). Toss the cherry tomatoes and sliced onion in olive oil and Ozganics Balsamic Dressing, season with salt and pepper, and roast on a baking tray for 20 minutes, or until caramelized.
3. Grill the Chicken: Preheat a grill to medium-high heat. Remove the chicken from the marinade and grill for 6-8 minutes per side, until fully cooked.
4. Assemble the Salad: In a large bowl, combine the butter lettuce, roasted tomatoes, onions, and fresh dill.
5. Serve: Plate the grilled chicken with the roasted tomato salad on the side. Drizzle with a little more Ozganics Mango & Chilli Salad Dressing if desired, and enjoy!
