Ingredients
- 1 jar of Ozganics Beetroot & Balsamic Relish
- 1 cup spelt flour
- 1 teaspoon baking powder
- 2 large free range eggs
- 1/2 cup milk
- 1 pinch sea salt
- 1 pinch cracked pepper
- Fresh lime and coriander (to serve)
Method
1. In a large mixing bowl combine the corn kernels, flour and baking powder until just mixed.
In a smaller bowl lightly whisk the eggs, milk, salt and pepper.
2. Transfer the liquid mixture to the dry and fold through gently to combine.
Heat 1 tablespoon of oil or butter in a large frying pan over a medium - high temperature.
3. When at temperature, add 2 tablespoons of batter into 1 section of the frying pan.
Repeat this step in another 2x sections of the frying pan.
Cook the fritter batter until bubbles start to appear.
4. Gently flip the fritter onto the other side and continue to cook until the fritter is cooked through.
Transfer the fritters to a wire baking rack or paper towel and continue this process until all of the
batter is used.
5. Serve with fresh lime wedges, coriander leaves, extra salt & pepper and a healthy serve of
Ozganics Beetroot & Balsamic Relish.
