This Baked Caesar Salmon recipe brings together the rich, creamy flavour of Ozganics Vegan Caesar Dressing with the natural health benefits of salmon, making it a nutritious and delicious meal.

Ingredients
- 1/2 cup Ozganics Vegan Caesar Dressing
- 1/2 Cup Ozganics Balsamic Dressing
- 4 Salmon Fillets
- 3 Tablespoons Olive Oil
- 1 Bunch Asparagus
- 1 Teaspoon Dijon Mustard
- 1 Pint Cherry Tomatoes, on the vine
- 1 Red Onion, cut into wedges
- 1 Whole Garlic Bulb, sliced in half
- Salt and Pepper to Taste
- Juice of 1 Lemon
Method
Prepare the Salmon: Preheat the oven to 200°C. Line a baking tray with parchment paper.Place the salmon fillets on the tray. Brush each fillet generously with Ozganics Caesar Dressing and season with salt and pepper. Let the salmon marinate while you prepare the vegetables.
Prepare the Vegetables: On a separate baking tray, arrange the asparagus, cherry tomatoes on the vine, onion wedges, and garlic halves (cut side up). Drizzle the vegetables with Ozganics Balsamic Dressing, olive oil and season with salt and pepper.
Roast the Vegetables: Place both the salmon and the tray of vegetables in the oven. Roast the salmon for 12-15 minutes or until it is cooked through and flakes easily with a fork.
Roast the vegetables for about 20 minutes, until the tomatoes are blistered, the asparagus is tender, and the onions are caramelised. The garlic should be soft and golden.
Make the Lemon Drizzle: While the salmon and vegetables are roasting, whisk together the lemon juice, olive oil, Dijon mustard, salt, and pepper in a small bowl to make the lemon drizzle.
Serve: Plate the Caesar-baked salmon fillets alongside the roasted vegetables. Squeeze the roasted garlic cloves from their skins and add to the plate for extra flavor. Drizzle the entire dish with the lemon dressing and extra Ozganics Vegan Caesar Salad Dressing just before serving.
