Italian Tomato & Chickpea Salad
What you will need
¼ cup OZGANICS Italian Dressing
2 large tomatoes
1 punnet organic cherry tomatoes
1 ½ cups organic chickpeas (cooked and cooled)
OR 1 x 440g can of organic chickpeas
½ bunch baby spinach
1 clove garlic crushed
Fresh basil leaves
Salt & pepper
How to make it
Chop large tomatoes and put in a bowl. Slice cherry tomatoes in half and add to the bowl. Add chickpeas, baby spinach and garlic. Stir through the OZGANICS Italian Dressing. Season to taste with salt and pepper. Sprinkle finely sliced basil leaves over the top then serve.
