Steamed Orange Marmalade Puddings
What you will need
4 tablespoons OZGANICS Orange Marmalade
⅓ cup sugar
1 ½ cups almond meal
½ cup gluten free flour
2 tablespoons OZGANICS Orange Marmalade – extra
How to make it
Preheat oven to 160°C. Grease and line 4 x 1 cup ramekins.
Cut four thin slices from the centre of one orange. Place one slice in the base of each ramekin.
Spread one tablespoon of OZGANICS Orange Marmalade over the orange slice in each ramekin.
Grate one tablespoon of rind from another of the oranges. Juice the remaining oranges.
You will need 1 ⅓ cups of orange juice.
Cream the butter, sugar and orange rind until light and creamy.
Beat in the eggs, one at a time. Stir in ⅓ cup of the orange juice, almond meal and flour.
Divide the mixture between the four ramekins.
Place the ramekins in a baking dish and pour water around them so that it comes half way up the sides.
Cover the entire pan with foil and seal tightly. Bake for 45 minutes.
Remove puddings from the oven and allow to cool for 10 minutes.
Heat the remaining cup of juice with the extra 2 tablespoons of OZGANICS Orange Marmalade over a medium heat.
Bring to the boil, then simmer for 2 minutes. Cool.
Turn puddings out onto individual serving plates. Pierce each one with a skewer.
Spoon the syrup over the top of each pudding.
Serve with ice cream, custard or fresh whipped cream.
